Although gluttony is not necessarily the first vice you would associate with Sin City, one could hardly be blamed for overindulging at wildly popular West Side standout Rollin Smoke Barbecue. Chef John Holland imparts his southern roots into hickory-smoked barbecue — pulled pork, smoked hot links, ribs and short ribs — and down-home sides including jalapeno coleslaw, yams and bacon potato salad.

"But the ongoing search for the Highland Drive exit has recently been incentivized by the presence of our city’s finest barbecue joint, Rolling Smoke Barbecue. This modest spot is run by two brothers from Arkansas, John and Trey Holland. They use hickory and other hardwoods, the way Prince does a guitar. This ’cue is the “Girl With a Pearl Earring” of meat—it’s poetry in blue smoke, a carnivore’s wet dream."
